Chicken with Tomato Cumin & onions (Kotopoulo me Ntomata, Artisia kai Kremydi)

1 chicken cut into portions
Salt
1 tin chopped tomatoes (drained of juice)
1 glass of onion coarsely grated (or blitzed in the food processor)
2 level teaspoons cumin
Salt the chicken and place in an ovenproof dish. Spread the onions, tomatoes
and cumin evenly over the chicken and sprinkle with a little salt. Cover
with foil and cook in a moderately hot oven (180 – 190 degrees) for 1.5
- 2 hours until the chicken is tender. Remove the foil and continue to
cook turning the cooking until the sauce has slightly thickened. Remove
chicken from the dish and using a skimmer spread the tomato and onion mixture
over the chicken leaving any liquid in the dish.
