Roast Chicken with Orange (Kotopoulo me Portokali)

serves 4 - 6
1 large chicken cut into portions
2 large onions coarsely grated (or blitzed in the food processor)
Salt
50 ml Brandy (2pts)
Juice of two oranges
1 orange finely sliced pips removed
Place chicken in ovenproof dish, salt and mix with onion. Pour the
brandy over the chicken and from a corner of the dish pour in the orange juice.
Place the orange slices over the chicken cover with foil and cook in a
moderately hot oven (180 – 190 degrees) for 1.5 – 2 hours) or until the chicken
is tender. Remove the foil and Place the orange slices under the chicken
roast for a further 20 – 30 minutes until the sauce is thickened.
Lovely with couscous to which you have added orange and lemon rind, lemon juice
and fresh parsley
