Welsh Rarebit

Serves 4

2½ pts per serving

100g extra light philadelphia with garlic & herbs
40g Caerphilly cheese, finely grated
few drops soy sauce
½ tsp wholegrain mustard
4 slices bread
freshly ground black pepper


Preheat grill to medium.  Mix the cheeses, soy sauce and mustard, season with black pepper.  Lightly toast the bread on both sides, then spread the cheese mixture on the toast and grill until golden.
