Chicken & Mushroom Slice

225g shitake mushrooms, choppes
350g chicken breast, skinless & boneless, minced
2 eggs, beaten
finely grated rind of ½ orange
4 tbsp natural yogurt
25g fresh breadcrumbs
salt & pepper
Mix all of the ingredients together & cook in a lined
450g/1lb loaf tin at 170°C/325ºF/Gas 3 for 1½ hours.
Serve with salad, hot or cold.
