Turkey or chicken escalopes with sage, lemon and bacon

From the new extra easy meals in minutes book

 

4x175g turkey or chicken escalopes

Salt and pepper

4 rashers of bacon

4 large sage leaves

4 slices of lemon

Fry light

200ml chicken stock

Mashed potato and veg to serve

Put each turkey escalope between 2 pieces of cling film and using a rolling pin roll them out to a thickness of about 5mm. remove cling film and season well

Lay rasher of bacon on top of each escalope and put sage leaf on top. Cover the sage leaf with a slice of lemon and secure using a cocktail stick

Spray large frying pan with fry light and cook for 3.4mins on each side until golden brown. Remove from pan cover and keep warm

Add the stock to the pan and bubble until thickened and reduced by about half season, pour over the escalopes and serve with mashed potato and veg
