Tomato Risotto

Chopped onion
Chopped pepper
100g risotto rice
2 Large tomoatoes
1tbs tomato puree
2 Knorr Italian stock cubes
Dried italian herbs
Place tomatoes in boiling water, peel, shop and set aside.
Fry onion, pepper and garlic in spray oil until soft.
Add risotto rice to frying pan and fry until translucent.
Gradually add the stock until half has been absorbed, then add the chopped tomotoes, the tomato puree and the herbs, then begin gradually adding the stock to the risotto again until the rice is cooked al dente.
