Spinach & Tomato Soup
500 g hand shredded spinach
1 yellow pepper seeded and chopped
2 sun dried tomatoes finally chopped
half an onion finally chopped
Half a tin chopped tomatoes
1 crushed clove of garlic
300 ml of water
300 ml tomato juice (unsweetened)
2 star anise
salt and pepper and a pinch of mixed herbs
The method is very simple (I don't have time for difficult bits) - bring to the
boil in a large saucepan and then simmer for 20-30 minutes. Remove the star
anise if you can find them and liquidise if you wish.
This makes about 4 good servings. I reckoned this being about 0.5 points per
serving to allow for the tomato juice.
To be honest all quantities are approximate so as nearly everything is 0 points
expand / contract as you wish.
