SWEET POTATO & CARROT SOUP WITH GINGER & ORANGE

 

SWEET POTATO & CARROT SOUP WITH GINGER & ORANGE

  •  Serves: 4

 

2 onions, chopped

pinch salt

5cm (2") piece fresh ginger, grated or chopped

4 cloves garlic, chopped

350g carrots, chopped

350g sweet potatoes, peeled and chopped

600ml vegetable stock

juice of ½ to 1 Seville orange

 

Put all the ingredients except the orange juice into a large pan.  Bring to the boil and simmer until the vegetables are soft, around 20-25 mins.

 

Blend with a hand held blender or in a food processor until smooth.  Season and add the orange juice.
