Rhubarb lasagne

 

Rhubarb lasagne

Serves 4
Pts for the whole thing 10
Pts for 1 portion 2½
For no counters the custard and almonds will need counting. See the next post for ideas.

500g rhubarb cut into 1" lengths
2 tbsp sweetener
125g lasagne sheets (no pre cook ones)
425g can low fat custard
2 tsp flaked almonds

Preheat oven Gas 8 230ºC 450ºF
Put rhubarb into a baking dish wiht 2 tbsp water (or use diet lemonade), bake for 5-8 mins. Remove from oven & sprinkle with sweetener.
Reduce oven temp to Gas 5 190ºC 375ºF
Spoon half the rhubarb into a baking dish, top with lasagne, cover with half the custard, spreading evenly. Add more lasagne sheets and the remaining custard. Sprinkle with almonds. Bake 25-30 mins and serve.

Could use apples or any other free no count fruit.
