Liz's strawberry rose gateau

2 large free range eggs
200g self-raising white flour
150g caster sugar
1 packet vanilla sugar
200g butter or margarine
4 heaped tablespoons strawberry jam
For icing and decoration:
200g icing sugar
4 tablespoons rose water
petals from one rose
* Cream the butter, caster sugar and vanilla sugar until fluffy
* Blend the two eggs into the mixture and beat
* Sift flour into the mixture and beat well
* Spoon the mixture between two greased 7" sandwich tins and cook for 25 mins at gas mark 5/200C.
* Remove from oven and leave to cool
* When cool, sandwich the two cake halves together with the strawberry jam
* Make rose icing, blending icing sugar with rose water, and spread over the top of the cake
* Wash and pat dry the rose petals and strew them over the still-wet icing
