Creamy pork, Leek and Mushroom Pasta

300g pork
mince
2 cloves garlic
1 medium onion, finely chopped
125g button mushrooms
2 leeks, sliced
1 can Campbells 99% fat free condensed mushroom soup
1 tablespoon cornflour
1 bunch fresh thyme, finely chopped
Dry fry the
pork mince, then remove from the pan and drain.
Saute the garlic, onion, leek and mushroom with some low fat cooking spray.
Add the mince and the soup and dilute with 1 can of water.
Add the thyme and cornflour and simmer gently for 20 minutes.
Serve with a large portion of pasta for an extra 3 points
