Chinese Roast Pork

 

Chinese Roast Pork

Serves 4

 Per serving: 3 Points

Calories 183  Fat 4g

 

1 pork tenderloin, well trimmed (400g / 12oz)

 

Marinade

4 tbsp teriyaki sauce

2 tbsp tomato ketchup

3 tbsp hoisin sauce

2 tbsp medium dry sherry

2 tbsp lemon shred marmalade

2 tbsp soft brown sugar

juice of 1/2 lemon

 

Mix togetether all marinade ingredients. Put pork tenderloin in a food bag and pour on marinade, leave overnight for the flavours to infuse.

Preheat oven to 240ºC, gas mark 9. Roast the tenderloin on a rack in the oven for 20-25 minutes turning once half way through.

While this is cooking, prepare the boiled rice.

To add extra taste to the dish you can use the leftover marinade to make a sauce. Heat it up in a frying pan, adding a little stock if too thick.
