Chicken liver pate with brandy

Calories 165/portion .......serves 6.

 

8oz chicken livers

1 onion, finely chopped

4oz mushrooms, sliced

1 garlic clove, crushed

4 slices lean back bacon, chopped

1 tablespoon tomato puree

2 tablespoons fresh mixed herbs, chopped

2 tablespoons brandy!

salt and black pepper , to taste!

       

In non-stick fry pan, dry-fry onion and mushrooms until soft. add garlic, bacon and chicken livers, cook 3-4 mins, medium heat, turning well.  place in liquidiser, with tomato puree, herbs and brandy. blend til smooth. spoon into 6 individual pots, pressing down well.        lovely on melba toast!
