Carrot, Onion and Ginger Soup

2 large
carrots, grated
1 large onion, diced
1/2 inch piece root ginger, finely chopped
1/2 teaspoon mixed dried herbs
Spray
a large saucepan with low-fat cooking spray and fry onion gently for 3-4
minutes.
Add the ginger and fry for 1 min.
Add the grated carrot and herbs, then cover with water.
Bring to boil and simmer for 20 mins.
Vary
the amount of water depending on how thick you like your soup.
