Tomato Rice

Tomato Rice

Serves 4
3 pts per serving (Original Points)

low fat cooking spray 
chopped onion 
sliced green pepper 
8oz (240 g) sliced mushrooms 
8 oz (240 g) rice 
400 g can chopped tomatoes 
1 pint vegetable stock 
2 tbsp tomato puree 
½ tsp mixed herbs 
salt and pepper


Spray wok with cooking spray & cook onion until soft. 
Add pepper, mushrooms & 2 tbsp water & cook 2 mins. 
Add rice and mix thoroughly. 
Add remaining ingredients and bring to boil stirring continuously. 
Simmer 20 mins, stirring occasionally.
