Baked Egg & Mash

Baked Egg & Mash

Found this on the WW boards posted by Cheekyminky as a suggestion as to what to do with leftover mash.  Sounds great.

Fry some onions in frylite and with paprika. 
Stir in to the mash together with either a tsp of horseradish or grainy mustard.
Put in an oven proof dish.
With the back of a spoon, press down on the mash to create a small well.
Crack an egg in the well and place in the oven until cooked and serve.
