Banana Muffins
Makes 12 
2½ Pts each (Original points)
250 g plain flour 
1 tsp baking powder 
1 tsp bicarbonate of soda 
½ tsp salt 
1 egg beaten 
5 tbsp water 
80 g soft brown sugar 
3 medium well ripened bananas peeled & mashed to a puree 
4 tbsp corn oil 
Preheat oven Gas 5/190½C/375ºF
Put 12 paper cases in suitable muffin tins. 
Sift together the flour, baking
powder, bicarb, & salt. 
In another bowl, beat together the egg, water,
sugar & banana. Add the corn oil to the wet ingredients & stir well. 
Quickly combine the 2 sets of ingredients & mix just enough to combine -
you should have a lumpy consistency. 
Spoon the mixture into the paper cases
& bake for 20-25 minutes until firm & springy.
