Chicken Garam Masala

Chicken Garam Masala

Serves 3
Points per serving: 2½ (original points)

225 g onions, chopped
low fat cooking spray
1 tsp salt
2 cloves garlic, crushed
1 tsp turmeric
½ tsp ground ginger
3 chillies, finely chopped or 2 tsp chilli powder (or to taste)
3 medium skinless, chicken breasts, chopped
1 x 400 g can chopped tomatoes
300 ml chicken or vegetable stock
400 g 0 pt vegetables e.g. butternut squash, cauliflower, peppers, mushrooms
2 tsp garam masala
chopped fresh coriander

Fry the onions until soft using the spray.  Add the salt and garlic, turmeric, ginger and chilli and cook for 2 mins.  Add the chicken and cook until browned.  Add the tomatoes, stock and vegetables and cook over a low heat for 20-30 mins to allow the sauce to thicken.

Add the garam masala and coriander and cook for 5 mins.


Serve with rice (adding points).
