Broad Bean and Leek Tortilla

Broad Bean and Leek Tortilla

Serves 4

On Core: 5 pts the whole recipe for the mozzarella

250g fresh or frozen broad beans
2 leeks, trimmed and sliced finely,
2 courgettes, sliced thinly
1 tbsp chopped fresh mint or 1 tsp dried
6 medium eggs, beaten
75g light mozzarella (5pts), cubed
salt & pepper

Blanch the beans, leeks and courgettes in a big pan of boiling water for 1 min.  Drain and refresh under cold running water.  Drain thoroughly.

Dry fry the veg with themint in a arge frying pan for 2-3 mins.  This will dry off any surplus moisture.  Season the eggs to taste and pour into the pan over the vegetables and cook genlty for 6 mins until almost set.

Preheat the grill, sprinkl;e the cheese on top of the tortilla and brown under the grill until bubbling, about 2-3 mins.

Cool slightly and serve.


Tip: Nice served hot or cold so great for lunchboxes.
