Caramelised Onion, Sorrel & New Potato Tortilla

Serves 6

Points plan 2 pts per serving (Original points)
Core: ½ pt for the sugar

Slowly cook 2 chopped onions in a frying pan with 1 tbsp olive oil and 1 tsp caster sugar until very soft and brown, about 15 mins.

Add 450 g sliced, cooked, new potatoes.  Stir and cook for 2 mins.

Add a handful of sorrel or baby spinach leaves and cook until wilted.

In a bowl, beat 3 medium eggs with 4 tbsp skimmed milk.  Season.  Pour into frying pan and cook genly until the base sets.  Grill to set the surface.  Cool a few minutes then slice and serve.
