Mediterranean Chicken Burgers

Mediterranean Chicken Burgers

Serves 4
Points per serving:   2½ (original points)

450 g minced chicken
1 clove garlic, crushed
1 unwaxed lemon
2 tsp sun-dried tomato paste
1 tbsp chopped fresh basil
1 egg white
frylight

Relish:
3 tbsp chopped fresh parsley
1 tbsp chopped fresh basil
1 shallot, finely chopped
2 tomatoes, skinned, seeded and finely chopped
lemon juice to taste

Put the chicken into a bowl and mix in the garlic, lemon zest, sun-dried tomato paste, basil and egg white.  Season and mix well.  Form into 8 burger shapes.

Place foil on grill rack and spray with frylight.  Place burgers onto foil and spray each with frylight.  Cook under medium grill for 5-6 mins each side.

While burgers are cooking, prepare the relish.  Mix all ingredients together, adding enough lemon juice to moisten.  Season to taste.

Notes

Great hot or cold.  Alternatively shape into kofta shapes and serve in pitta bread, remembering to add the points for the pitta.
