Sticky Cashew Nut Chicken

Serves 4
Points per serving: 5½ (original points)
4 medium chicken breasts, skinless & boneless, cut into
chunks
3 level tbsp honey
2 tbsp soy sauce
75 g cashew nuts
100 g baby spinach
packet of beansprouts
bunch spring onions, chopped
juice of 1 lime
Mix the honey and soy sauce and stir in the chicken.
Marinate 30 mins.
Place chicken into a hot wok with the cashew nuts and stir
fry u ntil the honey has made a sticky sauce and the chicken is cooked through.
Add the veg and lime juice and stir fry until the spinach is
wilted and the veg is heated through.
Serve with rice or noodles if you wish.
