Fruity Chicken Curry

Fruity Chicken Curry

Serves 4
Can freeze up to 1 month

low fat cooking spray
100 g bacon lardons
1 onion, chopped
4 chicken breasts cut into bite sizes
1 teaspoon of curry powder
1 teaspoon of ground cumin
1 apple, cored and sliced
1 banana, sliced
1 tin chopped tomatoes
9fl oz chicken stock

Heat a large saucepan with low fat cooking spray, add bacon lardons and onion, cook for 2-3 mins then add chicken
Brown chicken and sprinkle the spices on to coat chicken.
Add remaining ingredients, bring to simmer, simmer for 15-20 mins, serve with brown rice
