Chicken & Passata Casserole

Chicken & Passata Casserole

An adaption of a Sainsbury recipe

Serves 4
Points per serving: 4 (original points)

2 tbsp olive oil
1 clove garlic, crushed
4 boneless, skinless chicken breasts
1 x 250g bag shallots, peeled and halved
salt & pepper
550 g passata
2-3 tbsp fresh thyme, chopped (or 1 tbsp dried)
1 green and 1 yellow pepper, sliced
12 pitted black olives

Heat the oil and cook the garlic, gently for a minute.  Add the chicken and cook for 2-3 mins each side.  Add the shallots and seasoning.  Pour over the passata and most of the thyme and stir well.

Place in a pre-heated oven 180ºC/350ºF/Gas 4 for 30 mins.

Stir in the peppers and olives and return to the oven for 30 mins.


Sprinkle over the remaining thyme and serve.
