Baked Chicken & Lentils

Serves 4
Points per serving: 9 with chicken quarters 4 with chicken breast (original points)

4 chicken breasts (or quarters)
1 onion (thinly sliced)
1 clove garlic (chopped)
2 rashers of lean back bacon (chopped)
210 g tin of green lentils
200 ml chicken stock
1 tbsp tomato puree
4 tbsp balsamic vinegar
½ tbsp dried tarragon
1 tbsp veg gravy granules
4 large vine tomatos
black pepper

Brown the chicken (frylite or oil allowance) and put to one side. Fry onion garlic and bacon until softened.

Throw all other ingredients except tomatoes in casserole dish with a lid, lay chicken on the top and bake for 20 mins. Cut tomatoes into quarters and lay on top of chicken then bake for another 25 mins.
