Italian-Style Chicken

Italian-Style Chicken

Serves 4 
Points per serving: 5 (original points)

4 boneless, skinless chicken breasts
1 tbsp olive oil
salt and pepper
100 g mozzarella light
3 medium tomatoes, sliced
2 tbsp pesto sauce
fresh basil to garnish

Preheat oven to Gas 6/200ºC.

Make a slit in the side of the chicken breasts.  Heat oil in a pan and brown the chicken for 5 mins each side.  Remove from pan.

Season the chicken, stuff with a layer of mozzarella then a layer of  tomato then the pesto.  Arrange on a baking sheet and cook for 20 mins.


Serve garnished with basil.
