Baked Eggs with Mushrooms, Bacon & Onion

Serves 4

Full Choice 2½ pts per serving (Original points)

3 rashers lean back bacon
4 large field mushrooms, finely sliced
½ red onion, finely sliced
4 eggs
4 tsp low fat fromage frias
frylight

Preheat oven to Gas 6/200ºC/400ºF

Grill the bacon until crisp and set aside.

Spray a pan with frylight and cook onion and mushrooms until softened.  Divide between 4 individual dishes.  Crack an egg into each one.  Top with 1 tsp fromage frias.  Season well.


Bake in the oven for 8-10 mins or until egg is set.  Snip the bacon into pieces and sprinkle over the baked eggs.
