2 weetabix
Half cup coffee
1oz cocoa
3tbsp sweetener
3 eggs (separated)
1 tbsp clear honey
Soften the weetabix with coffee.

Add rest of ingredients except egg white and mix.
Whisk egg whites until stiff peaks then fold into mixture.
Put in pyrex dish
and cook in the microwave on full for 5 minutes.

142ml skimmed milk (2 syns)
142ml water
113g self-raising flour (20 syns)
1 teaspoon mixed spice
14g artificial sweetener (optional) (1 syn)
1 egg, beaten
Preheat the oven to 180ºC, 350ºF or Gas Mark 4
Put the Weetabix and sultanas in a bowl. Pour the milk and water over the top and leave to soak up all the liquid.
Stir in the flour, mixed spice, sweetener and beaten egg.
Spoon the mixture into a 454g (1lb) lined/non-stick loaf tin and bake in the preheated oven for 1¼ hours until cooked.
Cool on a wire rack before serving then cut into 12 slices.

50g dried prunes (1)
1 medium egg (1.5)
2 weetabix (2)
½ pint cold tea no milk/sugar
1 tsp mixed spice
Put weetabix, dried fruit chopped up, and mixed spice in mixing bowl. Add cold tea and leave 20 mins to absorb. Mix well and add egg and flour.
Fry light a loaf tin and place mix in it. Cook in oven gas mark 4 for 1hr 15mins.
Cut in 12 slices so it is 1 point per slice.

50g dried prunes
1 medium egg
2 Weetabix
½ pint cold black tea
1 teaspoon mixed spice
1. put Weetabix, chopped fruit and mixed spice into a bowl and soak in the cold tea for 20 minutes
2. add egg and flour, mix well
3. line loaf tin with greaseproof paper and pour in mix
4. cook in oven gas mark 4/ 180 for 1 hour 15 minutes
5. leave to go cold then slice

If cut into 6 =2 (FC) or 1.5 (NC)
If cut into 8= 1.5 (FC) or 1.0 (NC)
Points remain the same if organic Weetabix is used
