Mediterranean Chicken

Mediterranean Chicken

Serves 2

Points per serving: 3½ (original points)

2 whole boneless chicken breasts, cubed
1 medium onion , sliced
4 oz pimento stuffed olives, sliced
Juice of 1 lemon, freshly squeezed
1 teaspoon Madras curry powder

Spray a large frying pan with Frylight and cook onion until transparent. Add and saute cubed chicken. When chicken is just cooked through, add olives, cooking for about two minutes. Add curry powder and lemon juice and cook for two or three minute

low fat cooking spray

14oz boneless,skinless chicken cubed

1 can WW mediterranean  tomato soup

1 can mixed beans in chilli sauce

1 1/2oz bag tortilla chips

2oz half fat cheddar cheese, grated

  

1. preheat oven gas mk4,180C,350F

2. using non stick pan and spray, cook chicken pieces 5-8 mins

3. add soup and beans and mix well. simmer 5 mins.

4. place in ovenproof dish.Sprinkle with tortilla chips and cheese and bake for approx. 10mins or until cheese has melted.
