Chicken, Bacon and Tomato Pasta Bake

Serves 4
Total 12 syns or 2 x HeA
Per serving 3 syns or ½ HeA

200 g whole wheat penne pasta
1 small onion finely chopped
2 cloves of garlic finely chopped
3 slices of bacon sliced into small pieces
1 large chicken breast cut into bitesize pieces
1 courgette
1 carrot
7 button mushrooms
1 400 g tin of chopped tomatoes
Handful of cherry or vine tomatoes halved
Splash of balsamic vinegar
1 chicken oxo cube
Oregano
Salt and Pepper to season
80g of Mozzarella cheese (12 syns or 2 x HeA)

Preheat oven to 190c or 374f
Place pasta into a saucepan of boiling hot water and cook
Spray a frying pan with some spray oil
Add the onion, garlic and bacon
Add the chicken and cook till browned
Add all over vegetables and cook for a further 5 mins
Add the tinned tomatoes, balsalmic vinegar, stock cube and oregano and bring to the boil then reduce the heat.
Add the mixture to a casserole dish, along with the pasta and top with mozzarella cheese.
Bake in oven for approx 30-40mins.
