Sweet Potato Burgers
Serves 4
2 syns per serving if not using cheese as HeA
1lb of potatoes, peeled and chopped
2 garlic cloves, crushed
1lb onions. finely chopped
2 mild red chillies, deseeded and finely chopped
handful of fresh coriander, chopped
50 g halloumi cheese (8 syns / 2 HeA) finely diced
salt pepper
frylight
Boil the potatoes until tender, drain, mash and transfer into a bowl add the
garlic, onions, chillies, coriander and cheese.
Divide mix into 4 portions and shape into burgers. Chill in the fridge for an hour to allow
the burgers to firm up.
When ready to serve, heat pan sprayed with frylight and cook the burgers for 5-6 mins
either side, serve with mixed salad or veggie stir-fry
