Red Lentil Soup

Red Lentil Soup

From a booklet which came with SW magazine

Syn free

Serves 4

2 onions
4 garlic cloves
9 oz red lentils
1 tbsp cumin powder
salt and pepper
lime wedges to serve

Finely chop onions and crush garlic and fry gently until soft.
Add lentils and cumin powder.
Pour in 2 pints/ 1¼ litres of water and bring to boil.

Reduce heat and simmer for 1 hour. I
f it gets to thick add more water

Divide between 4 bowls and serve garnished with lime wedges(optional)
