Spiced Carrot & Lentil Soup

Dry fry some cumin and chili flakes. Add chopped onion, potato and carrot.

Add
dried red lentils and top up with chicken stock.
Simmer until lentils are soft
and veg is cooked.

The magazine says to blitz this afterwards, which I did the first time, but I
really wanted more texture. So the second time I made it, I cut the carrots and
potatoes into small diced cubes and just left it like that and I think it's
much better that way. You feel like you're eating something then and it's very
satisfying. It's a really filling soup.
