Liver & Bacon Rice

Serves 1
75g lambs liver, cut into thin strips
1 rasher lean back bacon, chopped
1 onion, chopped
50g button mushrooms, sliced
60g dry weight rice
salt & pepper
Cook rice as directed on the pack. Drain and set
aside.
In a non-stick pan (spray with frylight if you want) fry the
bacon for 2-3 mins. Remove and set aside. Cook the onion in the pan
for about 5 mins, add liver and mushrooms and cook for 2 mins.
Add the rice to the pan, return bacon to pan and mix
well. Season and cook to heat through.
Serve.
