Courgette Pasta Sauce

2 medium courgettes

1 clove garlic
1 tablespoon Parmesan cheese
1 tablespoon single cream
1 tablespoon olive oil


Cook courgettes and garlic very gently in the oil for approx. 20 minutes
Beat the courgettes with a wooden spoon, add the other ingredients and briefly heat through.  



Note
The courgettes make this surprisingly juicy. Extra tablespoon of cream 1 point.
