Chicken Chow Mein

Chicken Chow Mein 

This is another of the old community recipes.  Remember the points are for the original points plan so you need to recalculate depending which plan you are following.

2 blocks of medium egg noodles 3pts
Spray cooking oil
1 clove of garlic crushed
1 small onion finely sliced
1 tsp of chopped ginger
2 chicken Breast 5pts
225g (8oz) of finely chopped veg ( i use pepper, courgette and mushroom)
200g pack of beansprouts,
4 Tbsp of soya sauce
1 tsp of sugar 1pts
2 tsp of sesame oil 2pts



Cook rinse and drain the noodles.

Heat spray oil in a wok or deep sided frying pan, and add garlic, onion and ginger. Fry for 2 min's

Add chicken and stir fry for 2 mins

Add veg and stir fry for 3 mins, then stir in the noodles, bean sprouts, soy sauce sugar and sesame oil. Stir fry for 2 mins taste and serve. 


 Notes
For quickness, use a bag of ready mixed stir fry veg from the fresh veg section.


CHICKEN CHOW MEIN

60g dried egg noodles (boil for 4 minutes)
1 tin of bean sprouts
Onion
Sweet corn
Mushrooms
Soy sauce to taste
Chicken

Dry fry onions (or use fry light) add chicken (if raw), when chicken is cooked
add all other ingredients and heat through, serve with noodles.

Chicken Chow Mein

(Serves 4 people)
4pts per serving

2 medium skinless chicken breasts cut into strips
6 tsp light soy sauce
150g medium egg noodles (Amoy straight to wok)
2 garlic cloves crushed
50g mange tout shredded
50g wafer thin ham shredded
3 spring onions chopped
salt & pepper (for seasoning)
frylight

Place chicken breast into bowl with 3 tsp of soy sauce and marinate for 10mins.

Stir fry chicken frylight for 2-3 minutes and remove from wok.

Spray wok again with frylight and quickly stir fry garlic before adding mange tout and ham. Cook for 1 min.

Add noodles, remaining soy sauce and spring onions then season. Stir fry for 2 – 3 minutes.

Add chicken and any juices to the pan and fry again for 3 – 4 minutes then serve.
