Chocolate Cheesecake

Filling:
2 pots Quark
2 tsp vanilla extract
1 sachet Cadbury’s Highlights
5 tbsps granulated sweetener
1 sachet gelatin

Base:
20 Cadbury’s Animal Biscuits

Crush the biscuits to a powder and press into the base of a loose bottomed 8 inch cake tin.
Bake in a hot oven for about 10 minutes until the chocolate has melted, then cool in the fridge.
Mix the Quark, vanilla extract and sweetener together.
Mix the Highlights with hot water and whisk in the gelatin, then whisk into the Quark mixture.
Pour over the base and leave to set in the fridge.
