Carrot Cake

Carrot Cake

Serves 4 - 8
12 syns for the whole cake
4 Scan Bran - crushed
1 Weetabix - crushed
5 oz grated carrot
½ teaspoon cinnamon
1 teaspoon nutmeg
1 tablespoon runny honey
2 tablespoons mincemeat
3 beaten eggs
1 tub Quark
lemon juice and sweetener to taste



Preheat the oven to Gas 4, 180C, 350F.
Mix together all of the ingredients very well in a bowl.
Transfer the mix to a baking tin lined with non-stick baking parchment and bake for 1 hour.
When cooked, turn out onto a wire rack to cool.
For the topping: mix the Quark with lemon juice and sweetener and spread onto the cake once cooled.


Carrot Cake

1 large ripe banana, mashed
60g Sunsweet Lighter Bake
90g light muscovado sugar
2 medium eggs, beaten
90g carrots, finely grated
90g sultanas
45g walnuts, chopped
finely grated rind of 1 orange
180g plain flour
1 tsp baking powder
1 tsp bicarbonate of soda
½tsp ground cinnamon

Pre heat the oven to Gas 4/180ºC/350ºF
Spray an 18cm (7") round cake tin with spray oil and line it with non-stick baking parchment.

Place all the ingredients for the cake into a large bowl, sifting in the flour, baking powder, soda and spice last.  Beat well to a smooth batter.

Pour into the tin and bake for 30 minutes.  reduce the oven temperature to Gas3/160ºC/325ºF and bake for a further 30 mins, until firm tho the touch.  test with a fine skewer...it should come out clean.  Leave to  cool in the tin for 5 mins, then turn out, peel off the lining paper and cool on a wire rack.

ICING:
60g low fat soft cheese
1 tbsp icing sugar
finely grated rind of ½lemon
fine shreds of orange rind


Beat the cheese, icing sugar and lemon rind together.  Spread over the top of the cooled cake and then decorate with the shreds of orange rind.

Notes:
Sunsweet lighter bake was a prune puree available ready done in a jar.  You could use the same quantity of drained canned prunes in juice, pureed, or alternatively apple puree.

200g porridge
200g bran flakes
2 egg whites
1/2 pint milk
1 tsp cinnamon
1 heaped tsp baking powder
Splenda 2-3 tbs more if you want it sweeter
250g grated carrot i used a bag already grated from asda
80z tinned pineapple in juice


I then blended the carrots even smaller still, then i blended the pineapple small separately, i then mixed the porridge oats, the bran flakes, half a pint of milk i then left that to soak for ten minutes. Then add the pineapple and carrot and the egg whites and the splenda to your taste, the cinnamon and then mixed it all together. I then put it in a 8 inch round cake tin sprayed with fry light and put in the oven on gas mark 4 for about an hour.
I also made a topping using 150g plain elf cheese, a zest of an orange and a tablespoon of the juice of an orange and splenda again to your taste, all the topping ingredients are then just mixed together and just spread on the cake.
Personally i preferred it without the topping as it was quite zingy, and i have got a sweet tooth, but i may try it with a different topping, maybe a vanilla flavour, any suggestions would be most appreciated. She later e-mailed me to say that the topping was growing on her !!!

36g All Bran
5oz carrot (grated)
1 tsp cinnamon
1-2 tbsp sweetener or to taste
3 eggs (beaten)
1 weetabix (crushed)
½ tsp mixed spice
1 tsp nutmeg
2 tbsp mincemeat (2pts)

1. Preheat oven to 180C/350F/Gas Mark 4.
2. Put the ingredients into a large bowl and mix well.
3. Turn the mixture into a lined tin, cover with foil and cook for 30 minutes. Remove foil and cook for a further 30 minutes.


4. Turn out onto a wire rack to cool.


Carrot cake 

400g ground oats
10 tbsps of sweetner
1 tsp of baking powder
1 tsp of bicarbonate
2 tbsps of ginger or mixed spice or 1 tbsp of each
350g grated carrot
2 bananas mashed
2 grated apples
4 eggs
Small tub quark
1 sachet of white chocolate options

Blitz oats until you make flour
Add ginger or whatever spices you are using. Bicarb, baking powder and sweetener
In another bowl, add mashed bananas, grated apples and eggs and mix well
Add grated carrots to the banana mixture and mix well
Stir oat mixture into carrot mix
Divide into 2 tins and bake at 180 degrees or 160 degrees in fan oven for 45 mins to 1 hr
When cool, mix quark with 1 tbsp sweetener and the sachet of options and spread between the cakes or you could make in one tin and spread mixture on top.

Don't over cook!!! My oven is quote potent fan one. 160 and 45 mins is just right
