Very Veggies

Tin of baby Carrots
Tin of Tomatoes
4 Sticks of celery
Red/Yellow/Green Pepper
Onion
Any other veg you fancy for no points

What you do is dry fry your onion or use low fat cooking spray. Then simply add the tin of tomatoes and carrots the chopped celery and peppers, Basically all the veggies.
Leave this to simmer on a low heat until veggies are just getting soft then add some cayenne pepper. If you want it mild just a pinch, but for those of you who like it hot a teaspoon should do it. Add this in and cook for another few minutes until veggies are ready.
You can add tomato puree to thicken it up a bit, you can also always put in a stock cube.

You can make it as chunky as you like.

You can have this as a no point lunch or on a Jacket Potato or with rice
