Turkey Loaf with Courgettes & Tomato

1 med onion chopped
1 garlic clove crushed
2lb lean turkey minced
1 tbsp chopped parsley
1 tbsp chopped chives
1 tbsp chopped tarragon
1 med egg white
1 med& 1 large courgette
2 med tomatoes
salt & pepper

 

line a non stick loaf tin with baking parchment.
place in a bowl onion, garlic and turkey add herbs and season well, mix together with hands add egg white to bind
press half the mixture into the tin thinly slice the courgette & tomato and arrange the slices over the meat top with the rest of the mixture and press down firmly
cover with a layer of kitchen foil and place in a roasting tin
pour in enough boiling water to come half way up the side of the loaf tin bake in oven for 1hr-1hr 15mins,gas mark 5 removing the foil for last 20 mins
meanwhile trim large courgette and thinly slice using potato peeler or metal cheese slicer, cut into thin ribbons and blanch the ribbons in boiling water for 1-2 mins drain and keep warm
transfer turkey loaf to a plate and drape ribbons on top slice and serve with no points salad

 

Can be eaten hot or cold.
