SYN FREE LEMON MERINGUES

g of Quark
1
lemon juice and rind
3
medium eggs, separated
5
tbsp of sweetener

Preheat oven to 180oC/350oF/Gas Mark

2. |
Beat the
quark in a bowl til smooth and creamy |

|
3. |
Add lemon
rind, juice, egg yolks and 3tbsp sweetener |
|
|
4. |
Share
between 4 small heatproof dishes or ramekins |

5. |
Stand them
on a baking sheet and bake for 10mins |
|
|
6. |
Meanwhile,
whip egg whites in a grease-free bowl until they hold their shape then whisk
in remaining sweetener |

|
7. |
Remove
desserts from oven and pile meringue on top. |
|
|
8. |
Return to
oven to bake for 5 more mins until golden brown. |
|
|
9. |
Serve
chilled on day of making (mine were not as nice the next day) |
