SYN FREE LEMON MERINGUES

 

300 g of Quark

1 lemon juice and rind

3 medium eggs, separated

5 tbsp of sweetener

 

 

1.

Preheat oven to 180oC/350oF/Gas Mark 4.

 

 

2.

Beat the quark in a bowl til smooth and creamy

 

 

3.

Add lemon rind, juice, egg yolks and 3tbsp sweetener

 

 

4.

Share between 4 small heatproof dishes or ramekins

 

 

5.

Stand them on a baking sheet and bake for 10mins

 

 

6.

Meanwhile, whip egg whites in a grease-free bowl until they hold their shape then whisk in remaining sweetener

 

 

7.

Remove desserts from oven and pile meringue on top.

 

 

8.

Return to oven to bake for 5 more mins until golden brown.

 

 

9.

Serve chilled on day of making (mine were not as nice the next day)
