SPICY BEAN POT WITH GERMAN STYLE SAUSAGE
Serves 4
Points per serving: 6½
1 tbsp oil
1 onion, chopped
1 red or green pepper deseeded and chopped
120g mushrooms, sliced
2 x 44g cans mixed beans in spicy pepper sauce or sweet & sour sauce
2 tbsp tomato puree
240g cooked continental style sausage (eg Bratwurst or smoked garlic
sausage) , sliced
salt & pepper
fresh parsley to garnish
Heat oil in a large pan and saute the onion and pepper for 3-4 mins,
until softened. Add the mushrooms and cook, stirring gently for another 2
mins.
Tip in the cans od beans, then add the tomato puree and the sliced
sausage. Bring to the boil, reduce the heat and simmer gently, stirring
occasionally for 5 mins.
Season and serve in warmed bowls, sprinkled with chopped parsley.
