Quorn bake

100g Quorn pieces
1 medium onion, diced finely
1/2 tin of chopped tomatoes
2 garlic cloves, crushed
1 piece low calorie bread
2 teaspoon very low fat spread
low fat cooking spray
salt and pepper to taste

Fry the Quorn pieces in the spray oil until slighlty browning. Meanwhile, fry off the onions and garlic for a few minutes. Add the chopped tomatoes and cook with the lid on for about 25 minutes on a low heat, until it's more like a paste.
Mix the Quorn pieces in with the tomato mixture. Transfer into a small oven proof dish. Crush the other garlic clove, mix with the low fat spread, and spread the bread with it. Cut into 4 quarters and place over the Quorn mixture. covering it all. Cook at 200C for 10-15 minutes until bread is crispy.
