QUICK HAM HOT-POT

 

Serves 4

Points per serving: 4½

 

2 tsp oil

360g gammon slice, trimmed and cut into chunks

1 onion, chopped

1 large carrot, chopped

2 medium potatoes, (200g) cut into chunks

30g frozen peas

2 tomatoes, chopped

4 rounded tsp Oxo gravy granules

salt & pepper

chopped fresh parsley to garnish

 

Heat the oil and add the ham.  Cook, stirring for 2-3 mins.

 

Add onion, carrot & potatoes.  Pour in 300ml water, bring to the boil, reduce the heat and simmer for 15-20 mins.

 

Add peas and tomatoes.  Sprinkle with gravy granules, then heat, stirring, until thickened and smooth.  Season to taste and serve, garnished with chopped parsley.
