Penne with Spicy Tomato Sauce, Sausage and Broccoli

 

Penne with Spicy Tomato Sauce, Sausage and Broccoli

  • Serves: 4       6 points

4 Bowyers low fat sausages

500g penne (dry weight)

1 head broccoli, broken into florets

1 onion, finely chopped

2 garlic cloves, finely chopped

5cm (2") piece ginger, peeled and finely chopped

1 red chilli, deseeded and finely chopped

1 x 500g carton passata

 

Preheat the oven to 200ºC Gas 6.  Put the sausages on a baking sheet and bake until browned and cooked through, about 15 mins.

 

Meanwhile bring a large pan salted water to the boil, add the pasta and cook as per packet instructions.  drain and set aside, reserving some of the cooking water.

 

Bring another pan of water to the boil and add the broccoli, cook for 5 mins, drain, rinse under cold water and set aside.

 

Spray a large pan with Fry light ans add the onion, garlic, ginger and chilli and cook gently for 2-3 minutes.  Pour in the passata and stir, bring to the boil and simmer for 5 minutes.  If the sauce is too thick add some of the reserved pasta water.  Slice the sausages and add to the sauce, toss with the pasta, then gently stir in the broccoli.  Serve.
