OVEN BAKED BACON WITH PEPPERS
Serves 4
Points per serving : 8½
2 tbsp oil
2 red peppers, deseeded and cut into quarters
2 green peppers, deseeded and cut into quarters
2 onions, cut into wedges
2 cloves garlic, chopped
salt & pepper
60ml dry cider
3 tomatoes, deseeded and roughly chopped
4 tbsp freshly chopped coriander
100g long grain rice
225g rindless back bacon, cut into large pieces
Preheat oven 200ºC/400ºF/Gas 6. Place oil , peppers and onions in
shallow roasting tin. Stir well to coat and bake for 40 mins, stirring
once during cooking.
Remove from the heat and stir in the garlic, cider, tomatoes and
coriander and return to oven for 5 minutes.
Meanwhile cook the rice in a large pan of boiling water for 15-20 mins
until tender. Drain.
Preheat the grill. Lay the bacon on the grill rack and cook for 5
mins, turning occasionally until crisp.
Stir the pepper mixture into the rice and divide between 4 serving plates.
Top with the bacon and sprinkle with chopped herbs.
