Lemon Grass Chicken & Noodles

5 spray low-fat cooking spray
350 g chicken breast, uncooked, skinless, boneless, cut into 2cm pieces
4 portion spring onions, green and white parts, chopped
1 stem lemon grass stems, discard tough outer portion and coarsely chop inside
2 clove garlic, crushed
1 portion stock cube chicken make up 240ml with hot water
2 tablespoon soy sauce
1 teaspoon lime(s) zest freshly grated
1/2 teaspoon pepper red flakes, crushed
225 g cooked fresh pasta, spaghetti, or noodles kept hot
30 g fresh coriander, leaves, coarsely chopped
Spray a large nonstick frying pan or wok with cooking spray and set pan over
medium-high heat. Add chicken and cook 5 minutes, until golden brown on all sides.
Add spring onions, lemon grass and garlic and stir-fry 2 minutes.
Add stock, soy sauce, zest and red pepper flakes and bring to a simmer. Simmer
until chicken is cooked through, about 5 minutes.
Add spaghetti and cook 1 minute to heat through. Remove from heat and stir in
coriander.
I didn't use pasta becaused it sounded revolting but used rice noodles instead
and added some red pepper as didn't have pepper flakes.
