Herb Citrus and Chilli Chicken

SERVES 4
1 lemon
½ orange
2 tsp crushed dried chilli
1 tsp dried mixed herbs
salt
4 chicken breasts
fry light
4 x 8oz potatoes
Preheat oven to 200oC or gas mark 6.
Grate the zest of the lemon and orange and mix with the chilli and mixed herbs.
Season with salt.
Using a sharp knife make 3-4 slashes in each chicken breast and place on a
baking tray.
Spray with fry light abd bake in the oven for 20-25 minutes.
At the same time cut the potatoes in to wedges (leave skins on) and cook in
boiling water for 5-10 minutes before placing on a baking tray sprayed with fry
light.
Bake in the oven with chicken until just starting to crisp on the edges.
Serve the chicken and wedges together with a large mixed salad.
