Cherry tomato toast

2 medium
sized slices of white bread
4 cherry tomatoes
salt
freshly ground black pepper
4 tsp of Olive oil
4 tsp of Dried oregano
Toast both
pieces of bread.
In the meantime slice the cherry tomatoes into enouh slices so that you can
cover both pieces of toast.
When the toast is ready and still hot, spread 1 tsp of olive oil on to each
piece.
Lay the sliced tomato evenly over the toasts.
season with salt and pepper.
Drizzle the last 2 tsp of olive oil over each piece of toast and then sprinkle
over the oregano.
Cut each piece of toast in half for each serving and eat immediately.
For
extra Points and a greater taste sensation, grill the toasts, before cutting,
under a grill to warm up the tomatoes and olive oil. In the meantime grate
enough of your favourite Mature Cheddar to make a thin layer on top of the
toasts.
Remove toasts from grill and cover with the cheese.
Place back under the grill until the cheese becomes nice and goey, not
bubbling.
Cut as before and enjoy!
