Carrot Pancakes with Vegetable Sauce

1 Carrot grated - 0 pt
3.5 tbspn Flour - 3.5 pt
1 Egg - 1.5 pt
Water - 0 pt
Salt & Pepper (to season)
1 x Tesco's tinned cream of mushroom sauce - 2 pt
Brocolli - 0 pt
Carrots - 0 pt
Cauliflower - 0 pt
Courgettes - 0 pt

Mix flour, grated carrot, water, egg until light batter consistency. Season to taste. Cook half the mixture in a non-stick frying pan, using cooking spray if necessary. Flip pancake half way through cooking when firm enough to move.
For filling, cook vegetables. Heat mushroom sauce and mix in with vegetables. Fill pancakes with sauce and serve with a salad garnish.  

Feel free to add any no point vegetables you like to the mushroom sauce.
This makes two pancakes and can be eaten as a main meal or serve two people with a satisfying starter for 3.5 points
